First-press technique
The wine-making method used for our "Rosato" is the traditional "first-press" technique characterised by very limited yiels in terms of quantity (25-30 litres for 100 kg of grapes) to ensure excellent quality levels. Cold-processing technology Nevertheless, traditional methods equally embrance technological innovation: Rosa del Golfo was the first wine in the Salento area to involve cold-processing technology to control the fermentation temperature of the grapes both native and imported varieties. |
